Fashioned from 60 year old bush vines on slate and clay soils, from various plots spread throughout 8 hectares at 700m elevation. Hand harvested, foot trodden, some skin contact, fermented with indigenous yeasts in cement tanks, then aged for a year in underground cement tanks.
