Kaltbach Le Gruyre cheese, matured in the Kaltbach caves by Emmi cheesemakers, is made in Switzerland from unpasteurised cows milk. This traditional cheese has been crafted since the 12th century. It boasts a firm, dense texture with a rich, nutty flavour with saly crystals and a slightly earthy aroma. Le Gruyre is protected by AOP (Appellation d'Origine Protge) status.
