Pancetta Steccata. Minimum Weight 400g Cured Meat Made in TuscanyFausto Guadagni's Pancetta Steccata is seasoned with black pepper and rosemary and then folded over and sewn up. It is aged for a year, pressed between 2 pieces of wood (the word steccare means to splint). After a year it is tender and aromatic and meant for eating uncooked.
