Quince Collection this marmalade is for lemonThe quince earned its place in food history a couple of millennia ago. Not edible raw, but when cooked with sugar the colour changes to a sunset red and the flesh becomes buttery soft. Well know as quince paste to go with cheese, we have added a twist with a spiced jam and a sparkling jelly. Quince Jelly Slow poaching the quinces over a long period allows the jelly to develop a dark rose colour with a slightly sharp flavour and rich perfume.
